Sivakasi Mutton Kuzhambu
It is a non-vegetarian specialty of Sivakasi and is prepared with the mutton. The dish is not difficult to make and required a bit of marinating of mutton and grinding of spices for the unique flavours. Ingredients of this dish are mutton with bones, onion, shallots, ginger, garlic, poppy seeds, red chillies, cumin and coriander seeds, turmeric powder, salt, sesame oil and water. After the gravy is cooked, marinated mutton is added to the same for slow cooking.
Sivakasi Style Egg Curry
Egg curry of Sivakasi gives an authentic flavour of south Indian ingredients. Unlike other recipes of egg curry, grated coconut and coconut milk are used in this recipe to enhance its flavors. This is one of the egg curries, which is not entirely made up by use of eggs only; potato is also the additional main ingredient of the dish. Ingredients used in this dish include eggs, potatoes, grated coconut, cinnamon stick, cloves, fennel seeds, garlic, ginger, curry leaves, dried red chillies, tamarind extract, mustard seeds, black gram dal, cumin seeds, methi seeds, shallots, tomato puree, rai, curry leaves, turmeric powder, salt and coconut milk.
